Cajun Dressing

 My husband makes this every year for us and we all look forward to it. The kids would rather have this over traditional stuffing! Thought I would share :)



1 pound bulk pork sausage
1 small onion, chopped
1 small green bell pepper, chopped
1 1/2 stalks celery, chopped
1 cup uncooked long-grain rice
3 cups water


Brown sausage in a Dutch oven, stirring to crumble; drain. Add remaining ingredients, and stir well. Place mixture in a lightly greased 12" x 8" x 2" baking dish. Cover and bake at 350 degrees F for 1 hour until moisture is absorbed.
